Paleo Macadamia-Coconut Chocolate Chip Cookies Recipe
Dry Ingredients:
- 1 1/3 cup almond flour
- 1/2 tsp soda
- 1/2 tsp salt
- 1 cup unsweetened shredded coconut
Wet Ingredients:
- 1/4 cup raw honey
- 1/2 cup Paleo Macadamia-Coconut Butter
- 1 egg, whisked
- 1 tsp pure vanilla extract
Fold In:
- 1/3 cup dark chocolate chips (Enjoy Life brand recommended)
Instructions
- Make the easy Paleo Macadamia-Coconut Butter first
- Preheat your oven to 350º F
- Mix all the Dry Ingredients together in a large bowl
- In a separate smaller bowl, mix together all the Wet Ingredients
- Pour the wet mixture into the bowl with the dry ingredients and mix well
- Lightly fold in the chocolate chips
- Line a baking sheet with parchment paper
- Form teaspoon-sized dollops with a rounded top and place on the parchment-lined cookie sheet
- Bake at 350º F for about 9-11 minutes, or until edges turn golden brown (oven temperatures and cooking times always vary – keep a close eye on your cookies!)
- Cool slightly, then remove from parchment paper
- Store in air-tight container
